Last month, a well-regarded Canadian raw food chef, Carmella Soleil and her partner, Don, stayed with us on their tour of the U.S. The experience left an indelible impression on Holly and I, and helped us truly appreciate live-foods as an abundant and enjoyable way of being. Although I am by no means a strict vegan, recent encounters with this lifestyle have taught me the great versatility of a plant-based diet, not as something restrictive, but expansive and full of potential.
